Great frying panThis frying pan heats evenly, and cooks fried eggs, omelets, pancakes, and French toast to perfection! This pan is sturdy-- thick enough so it doesn't warp, yet not too heavy to lift with one hand to slide food out onto a plate. Cleaning the pan is easy. This frying pan was relatively expensive for the size, but after seeing how well it performs on my electric glass-top stove, day after day, it's my most often-used pan and well worth the price. 5Top Notch PanI've used this pan for about 2 months averaging 4-5 times a week. It's a good, heavy pan that distributes heat evenly (I use gas). Great for omlettes or any other duty. I have other Calphalon pans that have withstood heavy use. One tip that I'll pass along- let the pan cool before washing and you'll extend the pan life and performance. 5Not Really Very NonStick . . . But Durable!See all of those commercials on TV where they burn cheese into the pan and it peels right off, or slide eggs around the pan with zero added oil like they're on skates?Well that's not these pans. If you want that kind of nonstick performance you're going to need to buy one of those pans, not these. From everything I have seen and read, the nonstick performance they show on those pans has a very short lifespan. But for these pans, it doesn't exist period.The nonstick performance is better than for, say. an aluminum pan. Not by a lot though. Even with added oil, my eggs stuck a bit to the pan from the first use. And every time since then.I liked my last two sets of Calphalon nonstick pans better. They only worked really well for maybe a couple of years, but at least they **DID** work very well for a while. These never have and never will. I suspect these will outlast those pans, and maybe in five years they will be about what they are now while the others would have been totally useless. Just a hunch looking at the surfaces of these pans so far. But I would prefer really good nonstick performance for a year or two and then replace them, than halfa$$ performance for five years. YMMV.OCTOBER 2019 UPDATE: The surface of these pans is pretty close to new despite having been used probably a couple of hundred times. Also, surprisingly and inexplicably, the non-stick performance appears to be a little better than when I first bought them. So I have bumped them up by one star. 4Pan Scratches Easily!The pan itself conducts heat nicely. The bad review is because the product description clearly states that you can use any utensil and the surface won't scratch. That is false. On its first use, I used a metal spatula and indeed it is completely scratched. What a bummer. 1Great pan!I have used Calphalon pans for decades and love them.The non-stick pans I had were getting very scratched, they still worked just fine but looks a little tattered.I found out that Calphalon had developed a higher temperature non-stick surface you could actually put in the oven.Well I caved in and bought this pan and it is a joy to use. It is not light, has a great lip and will go in the oven. You still have to take care if you are using metal utensils so you do not scratch them but overall I think it is great. 5The new design is pretty awesome because they're dishwasher safe and allow metal utensilsI was originally looking for the pans that this line replaced. We have other calphalon pans that we used for about 6 years, and when the nonstick coating eventually stopped working as well they just replaced them. Awesome products from a great company. 5Scratched up almost right awayI've only had this a few weeks. My experience with Calphalon over the years has been excellent. I have a Unison slide 8" pan which is maybe 8 or 9 years old and still cooks great, though it is beginning to lose bits of itself into the food as non-stick does over time. My brand new 8" signature pan (which cooks well, don't get me wrong) already has a set of four deep scratches in the non-stick surface. We only make eggs in this thing, and it is supposed to accept metal utensils anyway. I should point out I am a pretty experienced cook, so I don't expect miracles, but likewise, I don't brutalize my non-stick equipment. I don't know whether this was some kid of quality foul up or what. The 10" is fine, but of course, the egg pan will see a lot more use. One star supposedly means I hate it, but I don't hate it, I am just deeply disappointed. I was planning to buy the deep saute pan from this line next, but now I don't think I can trust it. 1Professional use productsI am a YouTube chef and cook to many over last 30 years. I have searched for a professional use NON-STICK cookware realizing that non stick pot/pans will have a very short life anyway. Personally....my pro use ALL-Clad and Langostina pots/pans have always served me well and never had an issue with food stick. That is to be learned. Quite easy if you know how to use stainless steel. But some foods simply require a delicate touch where non-stick cookware comes into play. I wanted to avoid the scratch, scrape, dig that most cooks do using harsh instruments on these type cookware that lead to the early demise of non-stick. My research came TRUE!!! This is the maker. This is the NON-STICK to use. Rated for use with metal utensils and high heat in oven..I HIGHLY recommend you DO NOT use metal utensils!!! Simply use plastic, nylon, whatever is NOT METAL to preserve the life of these wonderful pans. To date: have made two dozen meals in last several days and I do not put these in dishwasher or use scour pads. All mess just wipes off then, I reheat pan and season with light olive oil before a cool down and stack between pans with a layer of paper towels. No metal to metal in any circumstance. Never thought I would own Caphalon after using my All-Clad and Langostina but this is the PRO ticket for using non-stick. 5Not a true 12in. Inner diameter is 8.5in.This is a good, sturdy, hefty pan with great nonstick properties. BUT...I was disappointed to see that this is not a true 12-inch pan. While the outer diameter is slightly more than 12 inches, the inner diameter is only about 8.5 inches, which is what some of my current 10-inch pans are.The lips on this pan are just very angled to make it look like a 12-inch. If I order a 12-inch pan, my expectation, like most here, is to have an inner diameter of around 10 inches, or 9.5 at the very minimum, to be able to cook a lot of food in it. Otherwise, you re better off just getting a 10-inch one with a similar cooking diameter.If you don t mind the cooking area of the pan, this may suit your fancy, but I d still recommend a cheaper hard anodized non-stick that can do the job just as well.The price doesn t match up to the quality and cooking area. 2Good build, heat capacitance, and non-stick.My background in non-stick pans is fairly limited. I always had the junky teflon pans you buy in a set from discount outlet stores, and they were always lightweight aluminum and the coating would inevitably start to flake off after a year or so even with good care. My mother bought me a GreenPan as a gift, which seemed much more durable and had a better weight and balance to it, but after maybe 5 years or so, eventually largely lost its non-stick. I used seasoned cast-iron for making eggs for a bit, too, but those tend to work very poorly for omelettes or runny scrambled eggs, where you cook on low heat, very slowly to produce very small curds. A lot of egg gets lost to the pan, and clean-up was a pain.So, I thought it was time to invest in some legit nonstick pans. After a lot of research and realizing how happy I was with my Calphalon nonstick skillet and saute pan and knives (and unhappy I was with my Cuisinart non-stick grill pan and Santoku knife), I settled on these, and am quite happy with them! They're made in USA. They're nicely weighted and balanced, so they stay on the stove and don't tip all over the place when I'm stirring eggs. They also conduct and hold heat really well - its harder to accidentally start burning the eggs because the pan responds a bit slower than a really thin aluminum pan.Now, I'm not looking for a pan that I can throw an egg on without any sort of fat. That's not my cooking style, and I'm not afraid of butter or oil. I did try cooking an egg without any fat as a test, and I guess it worked well enough (but tasted awfully blah, unsurprisingly), but perhaps not as well as some brand-new ceramic or other pans may do at this particular task. But, for my use case, it cooks my food just right with a very thin light coating of butter.I've run them through the dishwasher several times now, and they are still performing nicely and haven't lost their appearance. Only time will tell the story of overall durability.Also, I love that the metals are handle, stay cool to the touch on the stovetop, and that the oven temp rating for these is quite high! I'm excited to make a Frittata in the larger one!Overall, I think these were a worthy investment for a pan I use nearly every day for breakfast! 5
